것ざっくり
닭갈비 (dak·gal·bi) is boneless chicken thigh in a 고추장 (go·chu·jang) marinade, cooked on a wide iron plate set into the table with cabbage, sweet potato, onion and spring onion until the sauce goes dark. Visit Korea's article (20 February 2025) tells the Chuncheon story: in 1970 a pork-rib restaurant short of pork switched to chicken and called itself 닭불고기집; it was grilled over charcoal then, and gas stoves moved it onto the plate. Both versions survive in Chuncheon, 철판 (cheol·pan) on the plate and 숯불 (sut·bul) over coals, the charcoal one with a salt, soy or chilli marinade.

The ritual is set. Try a piece plain, then wrap it in a leaf with garlic or chilli if you want; add 사리 (sa·ri), rice cake, sweet potato, cheese or noodles, to the plate; and when the chicken is gone, staff fry rice in the sauce that is left, which Visit Korea calls Korea's official dessert.
The address is 춘천 명동 닭갈비 골목, a 150-metre alley of dakgalbi houses off Chuncheon's main street (52 Joyang-dong), which filled in through the 1970s and 1980s. Visit Korea's 2025 price check: 15,000 won for the original at 우미닭갈비, 16,000 for spicy, 19,000 with cheese; 14,000 at 원조 숯불 닭불고기집.
