것ざっくり
냉면 (naeng·myeon) is cold noodles, and the first question is 물 (mul) or 비빔 (bi·bim): in a chilled broth, or tossed in red sauce without one. The Korean Food Promotion Institute's magazine splits the noodles too: buckwheat for 평양냉면 (pyeong·yang·naeng·myeon), potato or sweet-potato starch for 함흥냉면 (ham·heung·naeng·myeon), wheat for Busan's 밀면. A boiled egg goes on top; the magazine's reasons are protein and a lining for the stomach against cold buckwheat.
くわしく
The two styles are opposites. Pyongyang style is a clear, cool beef broth with soft buckwheat noodles; at 강서면옥 in Seosomun-dong, open since 1948, the house advice is to taste it before adding any vinegar or mustard. Hamhung style is chewy starch noodles under a hot red sauce, sometimes with seasoned skate on top, and Seoul's old addresses for it are 오장동 by Jungbu Market, where about twenty Hamhung houses opened after the war, 명동, and 예지동 (magazine, 13 November 2023).
A bowl in Seoul averaged 12,692 won in September 2026 in the Korea Consumer Agency's survey, the highest of the regions it covers.
