것ざっくり
막걸리 (mak·geol·li) is rice wine that is barely filtered, so it pours white. Visit Korea's page on it (20 February 2025) gives the method: rice or wheat, yeast and water, one to two weeks of fermentation, then a rough filter, which leaves it at about 4 to 6%. Filter it properly and you have 청주 (cheong·ju); distil that and you have soju. Old records call it 탁주 (tak·ju), and it was the farmworker's mid-morning drink, 새참 (sae·cham). The page names the breweries it would send you to, Jipyeong in Yangpyeong (founded 1925) among them, and Jangsoo Draft as the best seller.

The market is small and getting dearer. Hankyung's reading of 2025 tax data (16 August 2026): makgeolli from regional breweries rose 5% by volume to 12,852 kilolitres and 26.5% by value to 61 billion won, so a litre now averages about 4,745 won against 3,940 a year earlier. Lotte Department Store's traditional-liquor sales to customers in their twenties and thirties rose about 130%, and GS25's ran at 2.4 times the previous year through November.
The trade meets every May. MAXPO 2026, the makgeolli expo, ran 15 to 17 May at the aT Center in Yangjae with more than 120 breweries and about 150 exhibitors.
