것The deal
순두부 (sun·du·bu) is tofu caught before it is pressed, soft enough to spoon. 순두부찌개 (sun·du·bu·jji·gae) is that curd in a hot stew, usually red with chilli, sometimes with clams or a pork and beef broth under it.
More about it
The home of the curd is 초당 (cho·dang) in Gangneung, on the east coast. Visit Korea's article (20 February 2025) explains the difference: the coagulant there is bittern drawn from sea water more than 200 metres down, and Gangneung is the only place in Korea that makes tofu that way. The village takes its name from the family of 허엽, father of the poet 허난설헌 and the writer 허균.
The menus there run from 순두부백반 (sun·du·bu·baek·ban), the plain curd with rice and soy sauce, to 얼큰 순두부, the spicy stew, and 짬뽕순두부 with seafood. Visit Korea priced them: 11,000 won for the plain set and 12,000 for the spicy one at 초당할머니순두부, 13,000 for the jjamppong version at 동화가든, which serves its spicy stew only at breakfast, 7 to 8 in the morning.
하는 법How to
For the plain curd, Visit Korea's advice is to eat it warm, spoon by spoon, and add soy sauce a little at a time so the nutty taste survives. For the stew, order the 백반 (baek·ban) set and rice comes with it.
