것The deal

돼지국밥 (dwae·ji·guk·bap) is Busan's bowl: pork bones boiled for hours into a cloudy broth, poured over sliced pork and rice in a 뚝배기 (ttuk·bae·gi). Visit Busan's page traces it to Hwanghae-do refugees in the Korean War, who stretched pork offcuts and offal into a soup for many; in the lean years after the war it went over noodles, and rice came when rice did. The broth has to keep boiling, which the page gives as the reason so many gukbap houses run 24 hours.

More about it

It arrives unseasoned, and that is deliberate. On the table: 새우젓 (sae·u·jeot), salted shrimp, for salt; 다진양념 (da·jin·yang·nyeom), chilli paste, for heat; 정구지 (jeong·gu·ji), the Busan word for chive salad; raw garlic, onion and chilli; and a nest of thin noodles to eat first. Visit Busan's order: chives in, then shrimp and paste to taste. The menu usually adds 순대국밥, 내장국밥 with offal, 섞어국밥 mixed, and 수육백반, the boiled pork on a plate with broth on the side.

In Visit Busan's 2020 survey of 571 Korean and 140 foreign visitors it came first with both groups. The survey page lists 본전돼지국밥 at 3-8 Jungang-daero 214beon-gil, Dong-gu.

하는 법How to

Noodles first, then build the bowl. Say 아, 시원하다 after the first spoon if you want to sound local; Visit Busan says that is the reflex.
