빙수 (bing·su) is shaved ice. 팥빙수 (pat·bing·su), the classic, is a mound of it with sweet red beans, fruit and condensed milk; the newer kind shaves frozen milk into fine flakes and piles mango on top.

Food Today's history (28 May 2026) starts it in 1913, when two ice companies opened in Seoul; by 1915 the city had 442 bingsu shops, and ice cream took over around 1930. The milk-ice version dates to 1985, when 밀탑 (mil·tap) opened in Hyundai Department Store with milk ice, hand-cooked beans and rice cake, and reset what a bingsu was.
In 2026 the spread runs from single-serve cups in the 4,000 won range to 220,000 won for Lotte Hotel's mango bingsu, which drew complaints. Four Seasons Hotel Seoul's Jeju apple mango bingsu is 149,000 won and its classic red-bean one 99,000, served at Maru on the first floor from 1 May to 30 September.
