것The deal

칼국수 (kal·guk·su) is the knife-cut noodle. The Korea Tourism Organization's food page describes hand-kneaded wheat dough rolled flat, sliced into strips with a knife and boiled in a broth made from chicken, anchovies or manila clams, with potato, courgette, spring onion and dried laver added to the pot. The word joins 칼, knife, and 국수, noodles.

More about it

In Myeongdong the two places to eat it are opposites. 명동교자 (10:30 to 21:00, by 명동역 exit 8) simmers chicken bones for its broth and serves the noodles alongside 만두 and 비빔국수 on a three-item menu. The 칼국수 alley in 남대문시장, open from 06:00, ladles broth over thick noodles at long counters and tops them with fried tofu skin, seaweed flakes and sesame, and a taste of the other dishes comes with your order.

하는 법How to

Order by the bowl. It arrives hot and the noodles keep soaking up broth, so eat it straight away rather than photographing it first.
