것The deal

쭈꾸미 (jju·kku·mi), spelt 주꾸미 in the dictionary, is a small octopus with webbing between its arms, which is why English calls it webfoot octopus. The dish you meet in Seoul is 쭈꾸미볶음 (jju·kku·mi·bok·keum): the octopus stir-fried in a red chilli sauce, often with cabbage, sometimes alone and then mixed into rice with radish salad, bean sprouts and flying-fish roe. Visit Korea's page for 불주꾸미, the fire version, says it numbs the mouth and that you choose the heat when you order.

More about it

Spring is when it matters. Chosun Biz's column (14 March 2026) explains the 알배기 (al·bae·gi), the roe-filled ones caught from March to May off Seocheon on the west coast, eaten as 샤부샤부 in broth or stir-fried; the government closes the fishery from 11 May to the end of August each year. The 동백꽃 주꾸미 축제 at 마량진 harbour in Seocheon ran 21 March to 5 April 2026, with the camellias out at the same time (Elle Korea, 27 March 2026).

하는 법How to

Order by the portion and pick a heat level; lettuce comes with it for wrapping (Visit Korea). In March and April, ask for the 알배기.
